Tarija's bodegas sit between 1,800 and 2,400 metres, among the highest commercial vineyards on earth, producing distinctive high-altitude reds and the aromatic singani that defines Bolivian spirits. Estates range from large historic houses to boutique producers who receive visitors by appointment only.
The city itself is unhurried and walkable, with a strong regional table — cordero, ranga-ranga, saice — and a café culture that makes it a genuine change of pace after the Altiplano.
